Globe Courgettes

We did not plant the trailing giant which has swamped the front garden, well maybe we did last year and it somehow overwintered before germinating.  Anyway it is productive, we have had five 11 to 13cm diameter fruits off it so far, and they eat well.

So far just hollowed them out and stuffed with something tasty.  These here were done with cous-cous, onion and chorizo.  More recently we used lentils, tomato, onion and garlic.  The hollowed courgettes were dropped in boiling water for a few minutes before draining, stuffing and baking for half an hour.  very tender – we ate the whole thing.
